Pet Nat - Natural Sparkling

Grape Variety: Syrah/Shiraz and Sauvignon Blanc

Viticulture: Vines are planted on a northerly slope, hand cane pruned, vertical shoot positioned to ensure good flavour ripeness and colour. Organic sustainable viticulture. The fruit was hand harvested in the morning while the fruit was still cool.

Winemaking: The grapes were whole bunch pressed to stainless steel tank, carefully managed skin contact. Wild yeast fermented in bottle at low temperature and matured on lees in bottle for 10 months. Disgorged in January 2023. Zero Additions, Unfined and unfiltered.

Bottled: March 2022, disgorged in January 2023 limited release of 60 dozen bottles.

Alcohol: 12.1%

Colour: Bright light copper

Bouquet: Nicely fruited on the nose showing red apple, rockmelon and grapefruit characters with hints of yeastiness and vanilla.

Palate: Lovely weight and rounded mouth feel, juicy summer berry fruit undertones beautifully supported by fine texture and bright acidity.

Ageing Potential: Enjoy now to 2025
